These baked taco ranch bites always disappear about five minutes after they hit the table. Crispy tortilla cups, savory taco beef, creamy ranch flavor, and melty cheese all baked together into the perfect little bite. They’re fast, easy, and totally crowd-pleasing, whether you’re hosting game day, feeding hungry kids, or just need a low-effort dinner idea that still feels fun.
Heat a nonstick skillet over medium heat. Add the ground beef and cook it while breaking it into small pieces. Once browned, drain any liquid or fat from the pan.
Mix in the taco seasoning, ranch seasoning, and a splash of water. Cook for a few minutes, stirring occasionally, until the beef is coated and the mixture thickens slightly.
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and arrange the tortilla scoop chips evenly. Spoon a portion of the beef mixture into each chip, filling it just enough to hold the toppings.
Sprinkle diced tomatoes over the beef, then top each bite with shredded cheese.
Place the tray in the oven and bake for 5–7 minutes, just until the cheese melts and starts to bubble.
Remove the bites from the oven and finish with chopped cilantro. Serve them warm with sour cream, guacamole, or salsa on the side.
