These Crockpot Chicken Fajitas are super easy and full of flavor. Toss chicken, peppers, onions, and seasoning into your slow cooker, let it do the work, and come back to tender, juicy fajitas. Wash the vegetables and slice them into thin strips.
Mince the garlic.
Place the chicken breasts at the bottom of the slow cooker.
In a bowl, combine the peppers, onions, minced garlic, and olive oil. Toss until everything is evenly coated, then spread the mixture over the chicken.
Sprinkle the fajita seasoning over everything.
Pour in the Rotel.
Cover and cook on high for 3–4 hours or low for 6–8 hours.
