Easy Meals to Make When You Have No Dinner Plan
I'm a busy mom, and if you're anything like me, you've probably had that moment at 4:45 PM when it suddenly hits-you have no plan for dinner.
When that happens, I fall back on a handful of easy, go-to meals I know I can pull together fast with minimal effort.

First, I take a quick look at what I already have in the pantry and fridge-leftovers, eggs, pasta, rice, bread (especially sourdough, since I'm a sourdough baker), cheese, frozen veggies, and canned staples like beans, tuna, and tomatoes.
And since I'm a sourdough mom, I started first with these easy sourdough recipes!
I usually have a sourdough bread on hand, and this Fresh Milled Sourdough Pizza Toast is one of my go-to recipe for dinner.
Fresh Milled Sourdough Pizza Toast

This Fresh Milled Sourdough Pizza Toast is made with only 4 ingredients, and since I have a fresh milled sourdough loaf ready, I just sliced it and topped it with our favorite toppings (pizza sauce, cooked ham, and cheese)
If I don't have sourdough bread on hand, I go used my sourdough discard and make this Sourdough Discard Skillet Pizza, which one of my easy dinner idea.
Sourdough Discard Skillet Pizza

This is a kind of meal that you just "use what you have". This is a no-bake recipe, cause you are just mixing a batter for pizza dough. Topped with your leftover chicken, cheese, potatoes, and spring onion, you have dinner ready in no time.
Second thing is I make these easy meals that are sure to have the ingredients available in my pantry. And you can always start with the following recipes.
Scrambled Egg

This is the best no-time dinner recipe. Just sautรฉ whatever you have-leftover veggies, bits of meat, even that last slice of ham-and add scrambled eggs on top. Serve it with toast or wrap it in a tortilla.
Or maybe you can just go with this Egg Tomato that you can make in just 10 minutes!
If you're a sourdough baker and have sourdough bread, you can easily top these scrambled eggs or make an egg sandwich.
And of course, if you have pasta, you have dinner.
These 3 Pasta Dinner Recipes use simple ingredients, and I used to start with these:
Homestyle Spaghetti

Spaghetti is always the best, 'cause when you have pasta sauce, you can use your leftover meat to add to it.
Creamy Pasta Tartufata with Chicken

If you have a jar of tartufata on hand, this is an easy dinner you can make. Plus you can always use leftover chicken here.
Creamy Dill Salmon Pasta

This Creamy Dill Salmon Pasta is a quick and simple dish that combines tender salmon with a rich and creamy sauce.
Fried Rice

If you have leftover rice, this is one of the best no-time dinner recipes. You simply toss it in the pan with eggs, frozen veggies, soy sauce, or any protein you have.
