These chocolate chip brookies really are the best of both worlds in one easy cookie. They're a hybrid between chocolate chip cookie dough and brownie dough baked together into one soft, fudgy "brookie". They’re fun, a little extra in the best way, and perfect when you can’t decide whether to go for cookies of for brownies!
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, beat the softened butter and brown sugar together until the mixture becomes smooth and creamy.
Scrape the sides of the bowl as needed.
Add the eggs and vanilla extract, then continue mixing until everything is well combined.
Add 4 cups of the flour, baking soda, baking powder, and salt. Mix until a soft dough forms.
Divide the dough in half. Place one half back into the mixing bowl.
To this half, mix in the remaining ¼ cup of flour, then stir in 1 cup of chocolate chips. This will be your chocolate chip cookie dough.
Take the second half of the dough and add the cocoa powder. Mix until the dough becomes evenly chocolate flavored. Stir in the remaining 1 cup of chocolate chips.
Using a cookie scoop, gather a small portion of each dough.
Place them next to each other on the baking sheet, gently pressing them together to form one brookie. Shape the dough into a circle and flatten it slightly on the baking sheet. Repeat the process with the remaining dough.
Bake the brookies for 12–13 minutes, or until the edges are set and the tops look slightly golden.
Remove the brookies from the oven and let them rest on the baking sheet for about 1 minute. Transfer the brookies to a wire rack and allow them to cool before serving.
