This fresh-milled einkorn Kaiserschmarrn is a simple Austrian shredded pancake with a tender, nutty texture and golden edges. Made in one skillet with raisins, butter, and a few basic ingredients, it’s delicious served warm with jam and powdered sugar.
Make the batter. Add the freshly milled einkorn flour, eggs, milk, sugar, and salt to a large bowl. Whisk until well combined. Let the batter rest for about 15 minutes. This gives the freshly milled einkorn flour time to absorb the liquid and hydrate (you can skip this if you’re in a hurry, but I find that it does make the batter easier to work with!).
Heat the skillet. Melt 1–2 tablespoons of butter in a large skillet (I use a 12-inch /30 cm) over medium heat, swirling it around to coat the bottom. I like using a cast-iron skillet or a good nonstick skillet. Pour the batter into the hot skillet and immediately sprinkle the raisins evenly over the top.
Cook the first side. Let it cook undisturbed for about 5–7 minutes, until the bottom is golden brown and the pancake is set enough to flip.
Divide and flip. Cut the pancake into 4 large sections with your spatula. Flip each section and cook for another 3–4 minutes, until golden on the second side.
Tear it up. Use your spatula to cut or tear the pancake into bite-sized pieces. Continue cooking for another 5 minutes, turning the pieces occasionally, until they're cooked through with plenty of golden edges. If you have smaller children, you can cut the pieces even smaller.
Serve. Serve warm with your favorite jam and a generous dusting of powdered sugar, if you like.
Notes
Tip: Kaiserschmarrn is very forgiving, so don't worry about making perfectly even pieces. The rough, crispy edges are part of what makes it so good!
