butter

coarsely ground

russet potatoes
peeled and diced, medium

chicken broth
2
cups
milk
2
tablespoon
cornstarch
8

Velveeta cheese
cut into ½-inch cubes
Instructions
In a medium pan, cook the bacon over medium heat until crispy, stirring occasionally. Remove from the pan and drain the grease.
In the same pan, cook the ground beef until browned. Drain any excess grease.
Turn the heat up to medium-high and add the diced onion. Cook for about 5 minutes, until soft.
Stir in the butter, minced garlic, parsley, basil, salt, and pepper. Let it cook for about 2 minutes to release the flavors.
Lower the heat to low, then add the cooked bacon, diced potatoes, and chicken broth.
Cover and simmer for about 15 minutes, or until the potatoes are tender.
Whisk the cornstarch into the milk until smooth.
Set aside the mixture.
Stir in the Velveeta until melted and creamy.
Ladle into bowls, top with green onions if you like, and enjoy while hot!
