How to Make Fig & Caramelized Onion Flatbread with Goat Cheese

Step 1: Heat 1 tablespoon (15 ml) of olive oil in a skillet over medium-low heat. Add the sliced onions and cook for 25-30 minutes, stirring once in a while, until they turn deep golden brown and soft. In the last few minutes, mix in the balsamic sauce and a pinch of salt (Image 1). Then remove from heat. Set your oven to 425°F (220°C) so it's ready when you need it.

Step 2: Put the flatbread on a baking sheet and lightly brush the top with olive oil (Image 2).

Step 3: Spread the caramelized onions over it first (Image 3).

Step 4: Add the fig slices (Image 4) and sprinkle the chopped herbs on top.

Step 5: Bake for 8-12 minutes, until the edges of the flatbread are golden and crispy (Image 5).

Step 6: If you like, drizzle a little honey over the top. Add fresh arugula and crumble more cheese over it just before serving (Image 6).
Hint: Don't rush the onions. Slow, low heat is what gives them that deep sweetness that makes this flatbread work so well. If they start to stick, just add a tiny splash of water and keep going. Properly caramelized onions should be soft, jammy, and golden brown, not crispy or burnt.
Baking Schedule
- 0-10 minutes: Prep onions and slice figs.
- 10-35 minutes: Caramelize onions while oven preheats.
- 35-45 minutes: Assemble flatbread.
- 45-55 minutes: Bake until crisp and golden.
💭Crucial Success Tips
The biggest key here is balance. You don't want to overload the flatbread with toppings, or it'll turn soggy instead of crisp. Spread everything out evenly, use a light hand with the cheese, and bake it hot so the base crisps up before the toppings release too much moisture. Also, add fresh arugula and extra cheese after baking. That contrast between warm flatbread and fresh toppings makes a big difference.
Recipe FAQs
You can caramelize the onions up to two days in advance and store them in the fridge. When you're ready to eat, just assemble and bake the flatbread fresh for the best texture.
Yes, but fresh figs really shine here. If you're using dried figs, slice them thinly and soak them in warm water for 10 minutes first so they don't dry out in the oven.
Any sturdy flatbread or naan works well. I like ones that are slightly thicker so they stay crisp on the outside but soft in the middle.
How To Store Fig & Caramelized Onion Flatbread with Goat Cheese
Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes to crisp it up again. This flatbread is best enjoyed fresh, but it freezes well for up to 1 month.
